List of Ingredients
1-1/2 cups yellow cornmeal, preferably stone ground
1 TB granulated sugar
1-1/2 tsp baking powder
3/4 tsp salt
1/4 tsp baking soda
1-1/4 cups buttermilk
1 large egg
1 large egg yolk
2 TB unsalted butterRecipe
Heat oven to 450 and heat up the 10 inch iron skillet.
Heat a pot of water to boil. In bowl mix 1/2 cup of the cornmeal and in another bowl mix the 1 cup of cornmeal with the sugar, baking powder, salt, and baking soda.
Pour the 1/2 cup water into the 1/2 cup of cornmeal and stir until the cornmeal becomes a thick mush. Whisk the buttermilk into the mush until smooth, then whisk in the egg and egg yolk. when the oven and pan are heated, stir in the dry ingredients into the buttermilk mixture. Remove the hot pan and add the butter and swirl it around the pan, pour excess butter into the batter and stir to mix. Pour the mixture into pan and bake for 18 to 20 minutes.
