    My favorite cornbread recipe and oh so easy

    List of Ingredients




    solid vegetable shortening
    1-1/4 cup corn meal
    2/3 cup flour
    1 egg beaten
    2 TB to 1/4 cup sugar
    1 cup milk
    1 TB baking powder
    1/4 cup vegetable oil
    3 TB mayonnaise

    Recipe



    Preheat oven to 425 degrees. Spoon a dollop of vegetable oil into a cast iron skillet and place in oven during preheating. Mix dry ingredients, add egg, milk, oil and mayonnaise to dry ingredients. Mix well. Remove pan from oven and pour the cornbread batter into the hot oil. Bake 425 for 20 to 25 minutes or until golden brown.
