Recipe Introduction
Who can resist a slice of this cake and almost everyone likes the texture and the icing. While other cakes push this old favorite to the back burner, it is still a winner with me. For a change of pace, surprise someone with this melt in your mouth dessert.
List of Ingredients
1 package (4 ounces) german chocolate
1-1/3 cups all-purpose flour
1-1/2 cups sugar
1 teaspoon soda
1/2 teaspoon salt
2/3 cups margarine
1 cup buttermilk
1 teaspoon vanilla extract
2 eggs
FROSTING:
3/4 cup evaporated milk
1/2 cup firmly packed brown sugar
1/2 cup sugar
1/2 cup margarine
1 teaspoon vanilla extract
3 egg yolks slightly beaten
1-1/3 cups flaked coconut
1 cup chopped pecans
For cake: Melt chocolate on low heat, cool, sift flour with sugar, soda and salt. Soften margarine and add flour mixture, 3/4 cup buttermilk and vanilla. Mix to dampen flour, beat 2 minutes. Add chocolate, eggs, and remaining buttermilk, beat 1 minute. Pour into 9 inch prepared cake pans. Bake at 350 for 35 minutes or until tested done. Cool 15 minutes.
Frosting: Mix milk, sugar, margarine, and vanilla, bring to a full boil and stir constantly. Remove from heat. Mixture may appear curdled but thats ok, quickly stir small amounts of hot mixture into egg yolks, then pour all of yolks into mixture. Return to boiling stirring constantly. Remove from heat and add coconut and pecans. Cool to spreading consistency and frost cake.
