    Million Dollar Cheese Cake

    Recipe Introduction

    I have made many different kinds of cheese cakes but this recipe is the grand daddy of them all. It is quite different than most recipes but the outcome is so good that you will never want to bake any other kind after making this one. Enjoy

    List of Ingredients

    CRUST:
    3/4 cup butter melted
    2 cups graham cracker crumbs
    Reserve 3 Tablespoons for top of cake
    Grease the bottom and sides of a 10 inch cheesecake pan with shortening. Mix crumbs and butter and press into the pan. Put in the freezer until ready to use to help set the crust.

    FILLING:

    4-(8 ounces cream cheese) softened at room temperature
    Juice of 1 lemon
    a squirt of lime juice
    1 teaspoon of vanilla flavoring
    4 eggs at room temperature and then separated
    1 cup of sugar reserve 2 to 3 Tablespoons of sugar
    1 pint of really cold whipping cream
    3 Tablespoons of cornstarch

    Beat the egg whites until they from a peak, beat the egg yolks in a separate bowl until light lemon color. Next, mix the egg whites and the yolks together with a folding motion, yet make sure to mix good. Add the rest of the ingredients one at a time. Don't over beat the mixture. Pour into the crust and sprinkle with reserved crumbs.
    Place a pan of hot water in the over so the cake will not over dry and DO NOT PREHEAT OVEN, but set the oven to 325 and bake for one hour and fifteen minutes. If crust browns good then its done. Turn off oven and leave the cake in the oven with the door ajar for one hour. Remove cake and cool on the counter really good before you refrigerate. Add any topping of your choice or serve as it is.
