    Million Dollar Fruit Cake

    This is my all time favorite fruit cake recipe. I usually make this one every Christmas. My sister and I are usually the only ones who like fruit cake and we can't resist this one. Bake one up for the next Christmas holiday

    List of Ingredients

    1/4 cup sherry
    1 cup golden raisins
    candied fruit
    2 cups chopped pecans
    3 cups all-purppose flour
    1/4 cup butter softened
    3/4 cup sugar
    3/4 cup packed brown sugar
    6 eggs
    1/4 teaspoon salt
    3/4 teaspoon mace
    3/4 teaspoon cinnamon
    3/4 teaspoon all-spice
    3/4 cup whipping cream
    1 (10 ounce jar) strawberry preserves
    3/4 teaspoon almond flavoring
    3/4 teaspoon orange flavoring
    3/4 teaspoon vanilla flavoring
    light corn syrup

    Pour Sherry over raisins and let them soak over night. Mix next 5 ingredients; dredge with 1 cup flour, stirring to coat, set aside. Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add eggs one at a time, beating well after each addition. combine remaining 2 cups of flour, salt, mace, cinnamon, and allspice. Add strawberry preserves and flavorings, mixing well. Stir in fruit-nut mixture and raisins. Spoon batter into a greased and waxed paper lined 10 inch tube pan. Bake at 275 for 3 hours or until tests done. Cool cake completely in pan. Remove from pan and remove waxed paper. Place on serving plate. Brush top with corn syrup; garnish with pecans and cherries. To store, wrap with cheese cloth soaked in sherry, and put in an air tight container. Place a cut apple in the middle of the cake. This cake should be baked a month ahead of time so that it can mellow in the sherry.
