Use as many apples as you wish. Slice into 1 quart measure, layering the apples with 1/4 cup of sugar into an air tight container. Keep layering apples and sugar till a large container is filled and then let stand overnight to "cure".
In the morning pack the apple slices tightly very tightly into 1 quart jars. Add as much juice from the container as will trickle down. Tighten lids and put into water bath for 8 minutes. Apples will remain white and not shrink if they have been packed tightly. when ready to use, open and treat like fresh apples.
