Winning Potato Salad

Recipe Introduction

Well this is the very best potato salad I have ever made and I usually make it every Christmas.

List of Ingredients

1 TB sugar
2 tsp all purpose flour
1/4 tsp ground mustard
pinch of salt
1 egg beaten
1/3 cup water
1 TB vinegar
3/4 cup mayonnaise
5 large cubed potatoes
4 hard cooked eggs
1 cup chopped celery
1/4 chopped green onions
Salt and pepper to taste


Recipe

In pan mix, sugar, flour, mustard, and salt. Mix egg, water and vinegar and stir into dry ingredients until smooth. Bring to a boil over medium heat, stirring constantly. Cook and stir for 2 minutes. Remove from heat and cool slightly. Stir in mayonnaise. In a bowl, mix the potatoes, hard cooked eggs, celery, onions, salt and pepper. Add the dressing and toss gently to coat. Refrigerate.
