    My brother Bane loved Salmon fixed this way. He was a much better cook than I but he did love when I made him special surprise meals.

    List of Ingredients




    1 can salmon not drained
    1 can corn drained (11 oz)
    42 saltine crackers crushed (1-1/2 cups)
    1/2 cup fine chopped onion and red bell pepper
    2 large eggs
    4 tsp vegetable oil

    Recipe



    Mix and mash salmon with liquid, skin, and bones. Add corn, 1 cup crumbs, onion, pepper, and eggs. Stir and blend. Spread rest of 1/2 cracker crumbs on a plate. Shape salmon into 8 patties and coat both sides with the crumbs. Heat oil on medium heat and fry patties 3 minutes per side. Serve with tarter sauce if you like.
