    Lemon Pie

    Recipe Introduction

    My son, Thomas, really likes this pie. I think it is the best lemon pie I have ever made, oops, I seem to say that about a lot of recipes don't I? Well for me it is the truth and I hope you think so too.

    List of Ingredients

    1 cup sugar
    1/2 tablespoons cornstarch
    Dash of salt
    1 cup milk
    3 egg yolks
    1/3 cup lemon juice
    1/4 cup butter
    Grated peel of 1 lemon
    1 cup sour cream
    9 inch pie shell baked
    Topping as follows:
    2/3 cup whipping cream
    2 tablespoons powdered sugar
    1/8 teaspoon almond flavoring

    In the top of a double boiler, mix sugar, cornstarch and salt. Stir in milk, egg yolks and lemon juice. Cook and stir over boiling water until thickened and bubbly. Cook and stir 3 minutes longer. Remove from the heat and stir in butter and lemon peel. Cool, stirring occasionally. When mixture is room temperature, stir in sour cream. Pour into shell and refrigerate several hours or overnight. For topping, whip cream until thick; beat in sugar and almond flavoring. Continue to beat until stiff. Spread on pie before serving.
