    Lemon Sponge Pie

    What can I say? My son really does love Lemon pie and here is a slightly different type but very good. This one is really easy to make, have fun and give it a try.

    List of Ingredients

    1 piecrust
    2 egg yolks
    1 cup sugar
    1/4 cup lemon juice
    2 tablespoons all-purpose flour
    1 tablespoon margarine, melted
    1/8 teaspoon salt
    1 cup milk
    2 egg whites
    Whipped creamBake pie crust in 450 oven. Lower the oven to 350. In a large bowl, beat egg yolks slightly and stir in the sugar, lemon juice, flour, margarine, and salt. Gradually stir in the milk into the yolk mixture until all ingredients are well mixed. In a small bowl, beat egg whites on high until stiff peaks form and stand straight up. Fold beaten whites into the egg yolk mixture. Put filling into piecrust and bake 30 minutes or until a knife inserted into middle comes out clean; Cool. Before serving, add a dollop of whip cream on top.
