I love apple pie and I can honestly say that is pie is heavenly. Bake one up tonight for your loved ones and see if they don't think this pie is the greatest!

    List of Ingredients

    3 cups unbleached all-purpose flour
    2 teaspoons baking powder
    1/2 teaspoons salt
    6 tablespoons ice water
    1 cup shortening
2-1/2 pound (about 5 large) tart apples
1 cup sugar or to taste
    1/4 teaspoon cinnamon
    1/4 teaspoon nutmeg
    1 tablespoon heavy cream

Mix flour, baking powder and salt in bowl; stir to mix well. Remove 1/2 of the mixture to a small bowl; mix with water until smooth. Cut shortening into remaining flour mixture in medium size bowl until mixture resembles coarse meal; mix in flour-water mixture until well blended. Shape into a ball. Wrap dough in wax paper. Refrigerate while preparing apple filling. Quarter apples, core, pare and slice into large bowl. Reserve. Mix sugar, cinnamon and nutmeg in a small bowl. Preheat oven to hot 400 degrees. Divide pastry in half. Roll out each half between 2 pieces of wax paper into 11 inch circle. Fit one circle into a 9 inch pie plate. Add half the apples; sprinkle with the sugar mixture. Top with remaining apple slices. Moisten edge of pastry with water. Cover top with second pastry circle. Press edges together. Trim pastry and shape edge as desired. Prick top crust with tines of fork. Brush top with cream. Bake in preheated hot oven 400 degrees for 50 to 60 minutes or until apples are tender. Cool pie on wire rack, serve warm or cold. Note: if top browns to quickly, cover top loosely with aluminum foil.
