    Million Dollar Cherry Pie

    Recipe Introduction

    I really love fruit pies of any kind and I had tried several cherry pie recipes but never had success until July 1996 when I stumbled upon this one. This pie recipe is the greatest, not only does it taste heavenly but it looks good enough to be judged as a winnner. I have to say, I am stingy when it comes to this recipe, I only give out portions to my family, well sometimes a friend, because I want to eat it all. Try it and see what you think.

    List of Ingredients

    1-1/2 cups sugar
    1/4 cup cornstarch
    2 cans pitted tart red cherries, drained, keep 3/4 cup of liquid
    1 egg white
    1 tablespoon margarine
    1/2 teaspoon almond extract
    milk and sugar for crust
    Mix 3/4 cup sugar and cornstarch in saucepan. Stir in reserved 3/4 cup of cherry liquid. Bring to boiling, stirring constantly with whisk; cook 1 minute. Whisk in margarine, almond extract, and remaining sugar. Remove from heat, fold in cherries. Let cool. Brush bottom of pie crust with reserved egg white and let dry. Put filling into pie crust. Cut lattice strips and place on top of pie. Brush strips lightly with milk and sprinkle with sugar. Bake in 400 degree oven for 10 minutes and then reduce heat to 375. Bake 35 minutes or until crust is golden and filling bubbles. If crust browns to quickly, cover edge with foil strips. Cool good before cutting and add a big serving of vanilla ice cream on top.
