    Million Dollar Peach Pie

    Recipe Introduction

    I know I have a lot of recipes that begin with Million Dollar and the reason is, they are worthy of that title. I love peaches and I had to search a long time to find a recipe that I really liked and that looked really good. You will not be disappointed in making this dessert, and I am pretty sure, you won't have a crumb left.

    List of Ingredients

    1 cup sugar
    3 tablespoons all-purpose flour
    1 stick of margarine plus 2 tablespoons margarine cut into small pieces
    9 medium peaches, peeled and cut into 1/2 inch wedges (about 7 cups)
    1 tablespoon lemon juice
    1 teaspoon vanilla extract
    2 tablespoons margarine
    reserved egg white mixed with 2 teaspoons water
    1/4 cup sugar
    unbaked pie crust

    Prepare pie crust for top and bottom. Mix sugar and flour in a large bowl and add peaches, sprinkle with lemon juice, vanilla, and toss with sugar mixture until evenly coated. Heat oven to 375. Spoon filling into pie shell and dot with margarine. Take the other pie crust and cut strips to make a basket weave design on top of the pie. Brush lattice with egg white mixture, then sprinkle with sugar. Bake 45 to 60 minutes until pastry is golden brown and peaches are tender when pierced. Remove to wire rack. cool 1 hour and serve with ice cream.
