    Million Dollar Rhubarb Pie

    Recipe Introduction

    I have always loved Rhubarb pie and my mother used to make this dessert just for me. The best I can remember, she did not use a recipe but it was always very good. I discovered this recipe and I have to say, it is the very best. When I make this pie, everyone wants a slice. You will see why when you make this lovely dessert. It is truly a winner.

    List of Ingredients

    1-1/2 cups sugar
    3 tablespoons flour
    1/2 teaspoon nutmeg
    1 teaspoon cinnamon
    1/4 cup margarine, cut into chunks
    2 eggs
    2 cups chopped rhubarb
    Unbaked double piecrustHeat oven to 450. Blend sugar and spices, margarine, and add eggs. Beat until smooth and stir in rhubarb that has been cut into small pieces. Pour into unbaked pie shell and top with another pie shell. Punch holes for steam to escape and bake for 30 minutes. Pie edges may start to burn so watch carefully. You can cover them with foil while the rest of the pie bakes. Cool and top slices with vanilla ice cream.
