    Million Dollar Vanilla Pie

    Recipe Introduction

    This is the best vanilla pie I have ever made. This pie, if directions are followed, will not weep. Start your oven and get ready for a huge surprise.

    List of Ingredients

    1 cup sugar
    3 tablespoons flour
    3 tablespoons cornstarch
    1/4 teaspoon salt
    3 cups milk
    3 large egg yolks
    2 tablespoons butter
    2 teaspoons vanilla extract
    1/4 teaspoon lemon extract

    Graham Cracker Crust as follows:
    1-1/4 cups Graham cracker crumbs
    1/4 cup butter
    2 tablespoons sugar
    Press into a 9 inch pie pan and bake 10 minutes
    Topping As Follows:
    1/3 cup water
    1 tablespoon cornstarch
    1 tablespoon water
    3 large egg whites
    pinch of cream of tarter

    Preheat oven to 350. Make and bake the piecrust according to directions. For filling, mix 1 cup sugar, 3 Tablespoons flour and cornstarch and 1/4 teaspoon salt into a large saucepan. Gradually whisk in 3 cups of milk until smooth. Bring to boil stirring often over medium heat. Boil 1 minute. Remove and beat 3 large egg yolks in small bowl. Gradually whisk in 1 cup hot mixture, return to saucepan, whisking constantly. Return to boil and boil 1 minute. Remove and whisk in 2 tablespoons butter and 2 teaspoons vanilla and lemon extract. Pour into pie shell. Cool and refrigerate 4 hours. Preheat oven to 350. Bring 1/3 cup water to boil. Dissolve 1 tablespoon cornstarch in 1 tablespoon water, then whisk into boiling water and stir until thick. Cool, mix 3 large egg whites, pinch of cream of tarter and the cooled cornstarch mixture in a large bowl. Beat until foamy. Beat in 1/4 cup sugar. Beat until stiff and spread over pie. Sprinkle with 1 tablespoon Graham cracker crumbs and bake 12 to 15 minutes or until brown.
