Recipe Introduction
This recipe was given to me by a good friend named Carolyn, way back when I was first married. We lived in Hiddenite North Carolina and as a young bride I was not very good at cooking. This special friend took me beneath her wings and taught me to cook many wonderful recipes. I cannot begin to count the times that I sat at her table while she described and demonstrated the art of fine dishes in her warm friendly kitchen. We bonded in a friendship that still remains today. I hope you will enjoy this sentimental recipe for it is really good.
List of Ingredients
2 (1 pound) cans pineapple chunks
1 tablespoon sugar
2 tablespoons cornstarch
1/4 teaspoon ginger
1 tablespoon limejuice
1 cup flour
1/3 cup sugar
1-1/2 teaspoons baking powder
1-1/2 cups grated cheddar cheese
1/3 cup melted butter
1/4 cup milk
whipped topping
Drain the pineapple, keeping the liquid. Mix the pineapple liquid, 1 tablespoon sugar, cornstarch, ginger and limejuice. Cook over medium heat until thickened. boil 1 minute. Stir in pineapple chunks. Put in a 9 inch square pan. Mix 1 cup flour and 1/3 cup sugar,baking powder, and grated cheese. Stir in the melted butter and milk. Spoon this over the pineapple. Bake for 30 minutes at 425 or until golden brown. Serve warm with whip topping.
