    Blue Ribbon Walnut Chicken Stir Fry

    This is the best stir fry ever. I also do this using tofu instead of chicken. Below I will explain about the tofu

    List of Ingredients




    2 TB cornstarch divided
    4 tsp oil divided
    1 TB soy sauce
    2 tsp chicken bouillon
    1 tsp ginger
    1 tsp chili powder
    3/4 lb cut strips of chicken
    4 cups fresh broccoli
    1 large onion cut into 8 wedges
    1 medium red or green pepper cut into strips
    1 cup water
    1/4 cup walnut halves

    In large plastic bag, mix 1 TB cornstarch, 1 tsp oil, soy sauce, bouillon, ginger, chili powder, add chicken and turn to coat and refrigerate 1 hour. In wok, stir fry chicken and marinade in oil until done. The marinade is what the chicken was coated in. Cook until done. remove and cook broccoli 8 minutes. Add onion and green pepper, fry 6 to 8 minutes or just until crisp tender. Return chicken to wok and bring to boil, cook 2 minutes. Sprinkle with nuts.
    FOR USING TOFU INSTEAD OF CHICKEN:
    Take a block of firm tofu and drain, cover with paper towels, several of them and put a heavy weight on top like a big can of grape juice is good. Let stand several hours to get the water out of the tofu. Take tofu and cut into blocks or chunks like chicken pieces. Lay the pieces on a tray and freeze for about an hour then put the frozen pieces into a plastic bag and freeze until ready to use. Freezing the tofu makes it taste more like chicken. To prepare, use the frozen tofu slightly thawed and do as above as for chicken.
