    Vegetarian Enchiladas

    Recipe Introduction

    I take a cooking class in the cooking Vegetarian and we have had some wonderful dishes. This one is my favorite and Amanda loves it too.

    List of Ingredients

    1/2 cup flour
    1/2 cup Nutritional yeast
    1 Tsp salt
    1 Tsp garlic powder
    2 cups water
    1 Tsp dry mustard
    4 TB soy margarine
    10 Tortillas
    2 small cans enchilada sauce
    3 cans of beans or refried fat free beans
    2 medium onions chopped
    1/4 cup chopped cilantro
    1/2 cup salsa

    Recipe

    In medium pan mix flour, yeast, salt, garlic powder and add water and mix good. Heat on medium until bubbling and thick. Remove from heat and add dry mustard and soy margarine. Set aside 1/2 cup of this cheese sauce. Add onions, beans cilantro and salsa to rest of cheese sauce and mix. Pour 1/2 cup of sauce in bottom of 9x13 pan. Dip tortilla in sauce and put bean filling in and fold and move to end of dish. Continue with this method for as many tortilla's you want and then pour some of the same sauce over top and last pour over the reserved 1/2 cup of cheese sauce. Bake at 350 for 30 to 45 minutes. This recipe makes so much that I have to freeze half of it to use at a later time.
