Ham Tarts

Ham Tarts
4 sheets phyllo dough
4 tablespoons butter, melted (might need more)
1 cup finely chopped cooked ham
1 cup sharp Cheddar cheese
3/4 cup shredded tart apple (Granny Smith)
1/4 cup ground Ritz-type cracker crumbs
4 miniature muffin tins (12 compartments each)
Heat oven to 350 degrees. F. Coat muffin tins with
cooking spray.
Lay one sheet of phyllo on a large cutting board.
Brush with some of the melted butter. Repeat with
2nd and 3rd sheets, stacking each on top of the
previous one as you go, ending with 4th sheet, which
you leave unbuttered.
Cut the phyllo stack into 48 squares -
.....Make 6 long cuts and 8 short cuts.
Press into muffin tins.
Combine ham, cheese, apple and crumbs in a bowl.
Press about 1 Tablespoon of mixture into each shell.
Wrap.
(This may be done several hours ahead and placed in
the refrigerater until ready to bake).
Bake for 15 to 20 minutes, until golden brown.
Makes 48 miniature tarts.
