    Mushrooms Stuffed with Bacon + Cheese

    3 slices of bacon
    8 mushrooms - remove stems and hollow (put these pieces
    aside)
    1 tablespoon of butter
    1 tablespoon chopped onion
    1 cup of shredded cheddar cheese -
    separate - 3/4 cup and 1/4 cup
    Preheated oven - 400 degrees

    Cook bacon until crisp, once cool cut to little pieces and
    add to the removed pieces of mushroom.
    In large frying pan add butter, melt butter slowly on medium
    heat, add onions. Cook until clear, add bacon and mushroom
    stems, heat until soft. Set aside in bowl and add 3/4 cup
    cheddar cheese and mix well. Put mushrooms in pan and
    cook on medium heat in remaining butter for a 1 minute
    flipping once.
    In shallow pan, arrange mushrooms, scoop bacon mixture
    into each mushroom. Bake for 15 minutes or until cheese
    has melted. Remove from oven and add remaining cheese.
