    Oriental Chicken Liver Appetizers

    1/2 pound chicken livers, each cut into 2 or 3 pieces, depending on size
    5 oz can water chestnuts, each sliced crosswise in two pieces
    1/2 pound bacon, each slice cut in two pieces crosswise
    1 recipe marinade (below)
    Place a piece of chicken liver and a thick slice of water chestnut on
    one end of bacon, roll tightly, and insert a heavy toothpick through the
    bacon, chestnut and liver to hold together as securely as possible.
    Place appetizers in bowl (I use a plastic bag) of marinade, cover and
    refrigerate for several hours or overnight.

    MARINADE
    2 tablespoons soy sauce combined with 1/4 cup water (or stock)
    1/2 teaspoon salt
    1/4 teaspoon garlic salt
    1/4 teaspoon black pepper

    Combine all ingredients in a bowl, large enough to hold the appetizers,
    and stir until well blended.

    To bake and serve: Place one cup hot water in a drip pan. Arrange
    appetizers on a cake rack, leaving about one inch between them, and bake
    in a preheated 450 degree oven for 10 minutes. Turn them over and bake
    for another 10 minutes. Plain toothpicks may be removed and replaced
    with frilled toothpicks. These can be prepared a day in advance and
    reheard in a 400 degree oven for 6 or 7 minutes.
    Makes about 20.
