    Pepper Dip

    List of Ingredients

    1 large green bell pepper
    1 large red bell pepper
    1 large yellow bell pepper
    1 - 2 jalapeno peppers, if desired
    1 small quartered onion
    3 - 4 cloves garlic
    1, 8 ounce package light cream cheese (do not use fat-free)
    1 tablespoon dried cilantro, or 3 freshly chopped
    1/2 teaspoon salt
    1/4 teaspoon ground black pepper

    Recipe

    Preheat oven to 450. Line a baking sheet with foil and coat with non stick cooking spray.
    Place the peppers, onion, and garlic on the baking sheet and bake for 20 minutes or until the peppers appear blistered. Turn the peppers as needed.
    Put the peppers in a sealed bowl and let set for 15 minutes to loosen the skins.
    Peel the peppers and remove the seeds.
    Place peppers, onion, garlic, cilantro, and cream cheese in a blender/food processor and blend or puree, your choice.
    Season with the salt pepper and serve.
