Spinach Stuffing Balls

1 3/4 c. stuffing mix
2 10oz. pkgs. frozen, chopped spinach,
...cooked and drained well
1 med. chopped onion
2 beaten eggs
3/4 c. butter, melted
1/2 c. freshly grated Parmesan cheese
1/2 tsp. garlic powder
1/2 tsp. thyme
1 tsp. salt
1/2 tsp. pepper

Recipe



Preheat oven to 350. Lightly grease a baking sheet.
Combine all ingredients.
Use an ice cream scoop to form mixture into balls.
Place balls on baking sheet and bake for 20 to 25 minutes.
Makes 8 servings.
These may be frozen before baking and stored in the freezer for 2 to 3 weeks.
