I recently came across this recipe in the Ceil Dyer book,
Best recipes from the back of boxes, bottles, cans and
jars (1979) "Southerners unite! This is the real thing--
this recipe for sweet potatoes has remained a popular
standby on the Karo Dark Corn Syrup label for years."
Candied Sweet Potatoes*
1 cup Karo Dark Corn Syrup
1/2 cup firmly packed dark brown sugar
2 Tablespoons butter or corn oil margarine
12 medium sweet potatoes, cooked, peeled, halved lengthwise
In small saucepan, heat corn syrup, brown sugar and butter
to boiling.
Reduce heat and simmer for 5 minutes.
Pour 1/2 cup of the syrup into 13x9x2 inch baking dish.
Arrange potatoes, cut side down, overlapping if necessary,
in the syrup.
Top with the remaining syrup.
Bake at 350 degrees F. for 20 minutes, basting often,
until well glazed.
Makes 12 servings.
