Rigatoni w/Cheese + Sausage

Rigatoni w/Cheese + Sausage
1/2 pound sausage
6 Tablespoons butter or margarine
1/3 cup chopped onion
1 clove garlic, minced
6 Tablespoons all purpose flour
2 cups milk
1 1/2 cups shredded sharp Cheddar cheese, divided
1 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 a package or 8 ounces rigatoni pasta, uncooked
2 medium tomatoes, thinly sliced
Heat oven to 350 degrees F.
In small baking dish, bake sausage 30 minutes, cool.
Slice into thin pieces: set aside.
In large saucepan, melt butter; add onion and garlic.
Cook until soft, but not brown; stir in flour.
Gradually add milk; cook over medium heat stirring
constantly, until mixture boils. Remove from heat.
Add 1 cup Cheddar cheese, Parmesan cheese, salt and
pepper; stir until cheese melts.
Cook pasta according to package directions, 10 minutes;
drain.
Stir pasta and sausage into cheese sauce.
Pour half pasta mixture into 2 quart casserole.
Place half tomato slices and 1/4 cup Cheddar cheese
evenly over pasta.
Top with remaining pasta, sliced tomato and Cheddar
cheese.
Bake, uncovered, 35 to 40 minutes or until hot and
bubbly.
Makes 4 to 6 servings.
