Shrimp Paella

from Goya Yellow Rice package
Shrimp Paella
2 packages, (8 oz.) Goya Yellow Rice Mix
2 Tablespoons Goya extra virgin Olive oil
1 teaspoon Goya minced garlic, or 2
...cloves fresh garlic, minced
1/2 cup Goya pitted Alcaparrado, rinsed
...and roughly chopped
1 package (7 oz.) Goya Chorizo, cut in
...1/4 inch slices
1 pound large raw shrimp, peeled and deveined
12 little neck clams
for garnish:
jar (4 oz.) Goya Fancy Pimiento, cut in strips
1 In a large suacepan, prepare the 2 packages of
Yellow Rice Mix according to directions using
the Extra Virgin Olive oil.
2. When th rice mix has simmered for 5 minutes,
stir in garlic, Alcaparrado, chorizo, shrimp and
clams. Cover and return to boil. Lower heat and
simmer for 15 minutes or until the liquid is
absorbed and rice is cooked. Remove from heat
and allow to rest for 5 minutes.
3. Serve in saucepan garnished with Pimiento
strips or arrange paella in a serving bowl
garnihsed with Pimiento strips.
Serves 4.
