grilled - Beat the Heat Bread

Here's a great bread recipe when you already have the grill hot and
don't want to heat up the kitchen. mmmm-good!

grilled - Beat the Heat Bread

1 large loaf French bread, halved lengthwise
1 stick unsalted butter, softened at room temperature
    3 teaspoons chopped garlic
    2 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley leaves
    1 teaspoon black pepper
    Fresh spinach leaves**
    1 ½ cups mozzarella cheese

Place the softened unsalted butter in a mixing bowl. Stir in the chopped
garlic and chopped parsley. Season the butter mixture with the lemon
juice and black pepper. Brush the butter mixture on both cut sides of
the French bread. Layer fresh spinach leaves over this. Sprinkle the
shredded mozzarella cheese over the top evenly. Put the slices back
together, wrap the whole loaf in foil and throw it on the grill for
    about fifteen minutes.

**I omitted the fresh spinach, as none of my kids eat it, and neither
will hubby! It was still great bread, tho' I did leave it on the grill
    for about 25 minutes.
