grilled - Cajun Chicken Kabobs
1 pound chicken breast (boneless, skinless),
...cut into 3/4 inch cubes
1 tbsp. butter, melted
2 tsp. Cajun seasoning (blackened redfish seasoning)
1 green bell pepper, cut into 3/4 inch pieces
1 onion, cut into 3/4 inch pieces
cherry tomatoes
bamboo skewers
chicken broth
Soak the bamboo skewers in water for 30 minutes.
(To prevent them from burning during cooking).
Toss the chicken with the seasoning and butter.
Alternate the chicken, onion, tomato and pepper on
the skewers.
Place on a slow-cooking part or upper section of
the grill. Baste with broth occassionally.
Serve with noodles, rice or creamy potato salad.
Makes 3-4 servings.
