grilled - Steaks w/Blue Cheese + Walnut Relish
6 ounces crumbled Roquefort cheese
3 tbsp. minced or powdered walnuts
3 tbsp. chopped green onions
2 tsp. dried parsley or 2 tbsp. chopped fresh
1 1/2 tsp. grated lemon rind
2 1/2 to 3 lbs. beef steak, cut 1/2 - 3/4" thick
1 1/2 tsp. dried thyme
2 1/4 tsp. salt
2 1/4 tsp. freshly ground black pepper
Place cheese, walnuts, onion, parsley and rind in a bowl.
Mix well and set aside.
Place the meat on a work surface.
Combine the thyme, salt and pepper in small bowl. Mix well.
Rub both sides of meat with the salt mixture and set aside.
Coat cooking grid with cooking spray and preheat grill
Arrange grid 5" from heat.
Grill steaks until medium/rare, about 3 - 5 minutes per side.
Remove and place on a warm serving plate.
Cut steaks into 6 portions.
Top each with a generous tablespoon or more of the relish.
Makes 6 servings.
