    steak - Mustard Herb Crusted Beef Tenderloin

    1, 4 pound beef tenderloin, trimmed of fat and tied with string
    2 tbsp. olive oil, divided
    1 tbsp. rosemary, fresh
    2 lrg. cloves garlic
    5 tbsp. bread crumbs
    3 tbsp. Dijon mustard

    Preheat the oven to 425.
    Salt and pepper the tenderloin.
    Spread 1 tbsp. of olive oil in a shallow roasting pan.
    Place the tenderloin in the pan. Roast for 30 minutes.
    Finely mince the rosemary and garlic.
    In a small bowl, mix together the remaining olive oil, rosemary, garlic
    and bread crumbs.
    Salt and pepper to taste.
    Remove tenderloin from oven.
    Using a pastry brush, spread the tenderloin with the mustard and pat
    the crumb mixture evenly over the mustard.
    Return the tenderloin to the oven and roast for another 25 minutes,
    or until a meat thermometer reads 125.
    Remove tenderloin from oven and rest for 15 to 20 minutes.
    Remove string. Slice and serve.
    Serves 6.
