cornedBeefBrisket - Tipsy Corned Beef Meal
3 - 4 pound corned beef brisket
1/2 C. Dijon-style mustard
2/3 C. brown sugar
6 whole cloves
2 T. corn or safflower oil
24 oz. ale (dark is better)
1 large red onion, quartered
4 medium carrots, cut diagonally in 1 inch lengths
1/2 C. celery leaves
12 peppercorns
Preheat oven to 375°F. Press the cloves randomly into the beef, then rub on
the mustard. Roll the beef in the brown sugar. Heat the oil in a large
oven-proof pan or Dutch oven. Brown the meat on all sides very quickly,
taking care not to burn the sugar. Add all the other ingredients. Cover the
pot with foil and roast in the oven for 2 1/2 to 3 hours.
