cornedBeef - Beef + Cabbage, w/White Sauce
1/2 head new cabbage, saving 1 c. cooked water
3 tbsp. butter
4 tbsp. flour
1 c. evaporated milk
1, 12 ounce can corned beef
bread crumbs mixed with a little melted butter
Cut cabbage in coarse slices. Cook in boiling salted water
for 10 minutes. Drain. Dilute milk with the saved water.
Melt butter, add flour and stir in diluted milk. Stir until
thickened. Season. Cut corned beef into small cubes. Mix
cooked cabbage, corned beef and white sauce together.
Pour into baking dish. Sprinkle with buttered crumbs and
bake at 375 degrees F. for 25 minutes.
