cornedBeef - Beef + Cabbage w/Wine
1, 4 pound corned beef brisket
Cold water
1/2 bottle white wine
1/4 tsp. peppercorns
1/4 tsp. bay leaves
1/2 tsp. parsley
1 med. size onion sliced
1 lg. carrot, sliced
1 can or 6 sm. white potatoes
1, 2 pound head cabbage cut in quarters
Wash corned beef thoroughly. Put into a large pot
and cover with equal parts of water and white wine.
Add all other ingredients except cabbage. Simmer
very gently for 3 hours. Skim when a scum arise.
Wash cabbage well. Add to pot and simmer for a
further 20 minutes, or until the cabbage is cooked.
