    cornedBeef - Glazed Corned Beef

    4 1/2 pounds corned beef, rinsed
    1 c. water
    1 c. apricot preserves
    4 tbsp. brown sugar
    2 tbsp. soy sauce
    non stick cooking spray

    Preheat oven to 350. Coat a large pan with cooking spray.
    Place corned beef in pan and add water. Cover tightly with
    aluminum foil and bake for 2 hours. Drain liquid. (This is
    great to cook potatoes, carrots and maybe some cabbage in.)

    In a small bowl combine preserves, sugar, and soy sauce.
    Spread the mixture evenly over the corned beef. Bake
    uncovered for 25 to 30 more minutes, or until the meat is
    tender; basting occasionally with pan drippings.
    Slice corned beef across grain and serve.
