cubes - Kettle Beef Goulash
4 tablespoons shortening
5 onions, peeled and chopped
2 green bell peppers, seeded and chopped
3 garlic cloves, crushed
1 1/2 teaspoons paprika
3 pounds stew beef, cut into 1-inch pieces
1 can (6-oz.) tomato paste
1/2 teaspoon salt
1/4 teaspoon ground black pepper
4 ounces sour cream
In a kettle, heat shortening and cook onions, peppers
and garlic until the onions are limp and transparent. Stir
in paprika. Add beef, tomato paste, salt and pepper. Stir
well to combine. Cook 1 1/2 to 2 hours, or until meat is
tender. Serve in bowls with part of sour cream on top of
each serving.
