    ground - Chili Manicotti

    4 manicotti shells
    1 tablespoon oil
    2 tablespoons onions, chopped
    1 garlic clove, chopped
    1, 16 ounce can beef or pork chili with beans
    1 cup water
    1 egg
    3/4 cup Ricotta cheese
    1 cup Cheddar cheese, grated

    Heat oven to 350 degrees F.
    Cook manicotti shells according to the package directions. Drain.
    In a large skillet saute in oil, finely chopped onion and finely chopped garlic clove until tender. Stir in chili with beans and water. Bring to a boil, reduce the heat, and simmer for 2 minutes.
    In a small mixing bowl combine beaten egg, Ricotta cheese and grated cheddar cheese. Stuff into the manicotti shells.
    Spoon half the chili sauce into the bottom of a greased casserole dish. Arrange the manicotti shells on top and cover with the remaining sauce. Cover and bake for 30 minutes. Sprinkle grated cheddar cheese on top and bake an additional 5 minutes.
