    ground - Meatloaf #6, ala Reuben

    1 1/2 Lbs Lean Ground Beef
    1 1/2 Cups Rye Bread Crumbs, (I process the bread
    ...in my food processor to make fine crumbs.)
    1/2 Cup Yellow Onion, finely chopped
    1 Large Egg
    1 1/2 tsp Salt
    1 Can (14 oz) Sauerkraut, drained
    4 Oz Swiss Cheese, grated

    Preheat oven to 350 degrees. Prepare 6 x 5 x 3-inch loaf pan with
    non-stick cooking spray.

    In a large mixing bowl, combine beef, crumbs, onion, egg and salt; mix
    well.

    Split meat mixture in half; arrange half in prepared loaf pan. Cover
    with sauerkraut; sprinkle with cheese. Arrange the balance of the meat
    mixture on top; pinching and smoothing sides to seal loaf.

    Bake, uncovered, at 350 degrees for 1 hour or until firm and browned.
    Makes 6 servings.


    I usually serve this with fried potatoes.
    Leftover (if there are any) make incredible sandwiches. Enjoy!
