ground - Salisbury Steak #4, w/Wine Sauce
4 slices bacon
1 medium green or red bell pepper, washed, cored,
...deseeded and cut into strips
1 cup sliced celery or fresh mushrooms
1 large sliced yellow onion
1 1/2 pounds lean ground beef
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/3 cup red grape juice, (or Burgundy or other red wine)
1/4 teaspoon dried crumbled thyme leaves
Cook bacon in large frying pan with medium/high heat until
crisp and browned, about 5 minutes. Transfer paper towels
to drain and set aside. Leave drippings in frying pan.
Add celery, onion, and pepper strips to drippings in pan.
Saute for 4 minutes, until crisp/tender.
Mix beef, salt and pepper together.
Shape into 4 oval steak patties, approximately 3/4 inch thick.
Transfer vegetables to heated serving platter.
Cover and keep warm.
In same pan, cook steaks until well browned.
(Approximately 3 minutes each side for medium.)
Place steaks on top of vegetables.
Cover, and keep warm.
Add grape juice and thyme leaves to pan.
Scrape bottom of pan while bringing to a boil.
Pour grape juice mixture over steaks.
Crumble bacon over top and serve.
Makes 4 servings.
