    This meatloaf is easy to make and yummy. Also looks good when served.

    ground - Spinach Roll Meatloaf

    2 1/2 pounds lean ground beef
    salt and pepper to taste
    1/2 tsp. garlic
    1/4 c. ketchup
    2/3 c. fine seasoned bread crumbs
    1 10oz. pkg . frozen chopped spinach, thawed and squeezed dry
    1 8oz. container low fat sour cream
    1 c. shredded Mozzarella cheese

    Preheat oven to 350. Need a 9x13x2" baking pan.
    Use a large bowl to combine the ground beef, salt, pepper, garlic, ketchup, and bread crumbs. Mix well.
    Lay out a piece of waxed paper and place the meat mixture in the middle. Pat down to a 1/2" thick rectangle. Set aside.
    Combine the spinach, sour cream and Mozzarella cheese together. Spread over the meat to within 1/2" of edges.
    From the narrow side, roll up like a jelly roll.
    Pat the ends to seal and place the seam side down in the baking pan.
    Bake 60 - 75 minutes, or until the meat is no longer pink inside.
    Makes 6 - 8 servings.
