Quick, easy and delicious!
ground - Stacked Enchiladas
2 pounds ground beef
1, 10 3/4 ounce can Cream of Mushroom
1, 10 3/4 ounce can Cream of Chicken
1 can enchilada sauce
1/2 cup milk
1 small can chopped green chilies
1 small can pinto beans (optional)
flour Tortillas (any size)
Brown beef in a skillet by itself.
While doing that, use a different saucepan and
place the other ingredients, except for tortillas.
Bring to boil and let simmer.
Once beef is browned, add to liquid mixture.
Let simmer an additional 10 minutes.
Warm tortillas.
Place 1 on bottom of plate.
Spoon 1/2 cup or so of the mixture on.
Then place another tortilla on top.
Top with any ingredients desired.
Additional ingredients I use to top are:
Cheese
Onions
Black Olives
Sour Cream
Salsa
Lettuce
Guacamole
