ground - Teriyaki Meatloaf
2 pounds lean ground beef
2 eggs
2 slices bread, soaked in water and squeezed dry
1/2 cup chopped green peppers
1 medium onion, chopped fine
1 clove garlic, crushed or 1/2 teaspoon garlic in a jar
2 tablespoons soy sauce
2 tablespoons brown sugar
2 tablespoons lemon juice
Preheat oven to 350 degrees. In mixing bowl, combine
all ingredients and mix well to blend. Spoon into a 6
cup ring mold or bundt pan. Bake about 1 hour, or until
no longer pink. Cool about 5 minutes. Prepare topping
and spoon over loaf.
topping:
1 tablespoon brown sugar
1 tablespoon soy sauce
1/4 teaspoon ground ginger
Mix well in a small bowl.
