roast - Java Roast
1/2 small onion, cut into small strips
2 cloves garlic, cut into small strips
5 pound beef roast
1 c. vinegar
vegetable oil for browning
2 c. strong coffee
2 c. water
1/2 tsp. salt
1/4 tsp. ground black pepper
Pierce roast at intervals, inserting onion and garlic.
Place roast in a large dish, and pour vinegar over top.
Cover and refrigerate overnight.
The next day, drain off vinegar.
Heat oil and brown roast on all sides in a large Dutch oven;
add coffee, water, salt, and pepper. Reduce heat, cover,
and simmer 3 to 3 1/2 hours.
Makes 10 servings.
