Browning the pot roast enhances the flavors, but you can skip that step if
you're in a hurry.
roast - Pot Roast w/Red Wine
3 pound pot roast
3 ounces of salt pork, blanched and diced
salt and pepper
1 cup dry red wine
1 large onion, quartered and sliced
1 bay leaf
1 small clove garlic, minced
all-purpose flour
Brown meat on all sides with the salt pork in a heavy stock pot or Dutch
oven. Sprinkle with salt and pepper; add remaining ingredients. Cover and
simmer for 3 to 4 hours. Remove meat and thicken liquid with a paste made
from equal amounts of flour and water. Taste and adjust seasoning.
Serves 4.
