    roast - Sweet + Sour Roast w/Noodles

    1, 3 - 4 pound boneless beef roast
    2 tablespoons brown sugar

    1/4 teaspoon ground cinnamon
    dash of ground cloves
    2 cups apple cider
    3 tablespoons butter
    1/4 cup flour
    2 teaspoons salt
    1/2 teaspoon pepper
    1 large sliced onion
    1, 6 ounce can tomato paste
    2 large sliced carrots
    1/2 pound egg noodles, cooked al dente and drained

    Put beef into a deep non metal, non reactive bowl that seals.
    Sprinkle with the sugar, cinnamon, and cloves.
    Then pour the cider over top.
    Cover and refrigerate for about 24 hours.
    Remove the beef from the juice. Drain and set aside.
    Strain and reserve the juice.
    Melt the butter in a Dutch oven type pot over a medium heat.
    Mix together the flour, salt and pepper.
    Sprinkle over the roast.
    Then brown the roast on all sides in the butter.
    Remove meat to place a cooking rack into the pot.
    Lay the beef on top of the rack.
    Add 1 cup of the reserved juice, the onion, and tomato paste.
    Mix well so as to loosen any pieces stuck to the bottom of the pot.
    Cover and cook slowly for 2 hours, adding more of the juice, if
    necessary. Approximately 1 hour before done, add the carrots.
    Cover and continue to cook until the meat and carrots are tender.
    Remove the roast and slice.
    Serve with buttered noodles, the carrots and the sauce.
    Makes 6 servings.
