steak - Beef Parmigiana
1 1/2 pounds boneless round steak
1/3 cup fine dry breadcrumbs
1/3 cup grated Parmesan cheese
1 egg, well beaten
2 to 3 tablespoons extra light Olive oil
1 medium onion, chopped
1, 6 ounce can tomato paste
2 cups water
1/2 teaspoon ground marjoram
1/2 teaspoon salt (or to taste)
1/4 teasspoon ground black pepper
3 slices (6x3x1/8 inch) Mozzarella cheese, halved
Pound steak to 1/4 inch thickness; cut into 6 serving size pieces.
Combine breadcrumbs and Parmesan. Dip steak in beaten egg and coat with
breadcrumb mixture. Brown steak in hot oil in large skillet and
place in a lightly greased 13x9x2 inch baking dish. Set aside.
Add onion to pan drippings; saute until tender, adding more oil if
needed. Add tomato paste, water, marjoram, salt, and pepper. Bring to a
boil. Cook, uncovered, 5 minutes, stirring frequently; pour over steak.
Cover and bake at 350 degrees F. for 50 minutes. Remove from oven. Uncover and
place a slice of cheese on each piece of steak. Return to oven and bake 10
minutes or just until cheese melts.
Serves 6.
