steak - Beef Steaks w/Bacon + Onion
2 sirloin steaks
2 Tbsp. lard or oil
2 slices (rashers) bacon, sliced
1 large yellow or sweet white onion, finely sliced
1 Tbsp. paprika
pinch of cayenne pepper
2 Tbs. flour
1 cup beef broth or water
1 Tbsp. fresh parsley, chopped
Trim the steaks of excess fat. Pound them lightly with
a meat mallet till about 1/2 inch thick.
Season with salt and pepper.
Heat the lard or oil in a large frying pan on medium/high.
When quite hot, put in the steaks and brown them on
each side for 2 minutes. Remove and turn the heat down
to medium.
Add the bacon to the pan and fry until almost crisp. Add
the sliced onion and fry, stirring occasionally, until
almost golden. Add the paprika and a pinch of cayenne
to taste. Cook for 2 minutes. Add the flour and cook,
stirring occasionally, for another 2 minutes. Pour in the
broth or water, season with salt and pepper, and bring
to a light boil.
Put the steaks back in the pan and heat them through,
or cook for a few minutes longer for more well done
meat. Mix in the parsley.
Makes 2 servings.
Serve with boiled or fried potatoes.
