steak - Herb Flank Steak, broiled
1 pound beef flank steak
1 cup chopped Italian plum tomatoes (4 to 6 tomatoes)
1/4 cup lime juice
3 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh oregano
1/4 teaspoon salt
Score steak on both sides. Place steak in resealable food storage
plastic bag or 13 x 9 inch (3 quart) glass baking dish. In medium bowl,
combine all remaining ingredients; mix well. Spoon tomato mixture over
steak. Seal bag or cover baking dish with plastic wrap. Let stand at
room temperature for 15 minutes to marinate.
Spray broiler pan with nonstick cooking spray. Place steak on sprayed
pan; brush with liquid from marinade. Reserve tomatoes. Broil 4 to 6
inches from heat for 10 to 15 minutes or until steak is of desired
doneness, turning once. Remove steak; keep warm.
With slotted spoon, spoon tomatoes onto steaks; discard remaining
liquid. Broil an additional 3 to 5 minutes or until tomatoes are lightly
browned. To serve, cut steak diagonally across grain into thin slices.
Makes 6 servings.
