    Buttermilk Corn Bread

    2 eggs
    2 c. buttermilk
    1 tsp. baking soda
    2 c. white cornmeal
    1 tsp. salt

    Pre-heat oven to 450. Generously grease a 9" square pan;
    heat in oven while mixing batter.
    In bowl, stir together baking soda, cornmeal and salt. Set aside.
    Beat eggs; add buttermilk. Add to dry ingredients all at once;
    and beat until smooth.
    Pour into heated pan. Bake 20-25 minutes, or just until set.
    Serve hot, cut into squares, with butter.
