Harvest Pumpkin Bread

Recipe Introduction
When I make sweet breads, I make at least 2 loaves. One is for immediately, and the other I let cool and then wrap in foil and freeze for later. That means you would have to double this recipe. This bread is yummy.
List of Ingredients
1 c. white granulated sugar
1/4 c. I Can't Believe It's Not Butter Light
1/4 c. applesauce
2 eggs
1 c. canned pumpkin, (8oz.)
2 c. flour
1/2 tsp. salt
2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground cloves
1/2 c. raisins, optional
1 tsp. grated orange rind
1/4 c. orange juice
1/2 c. chopped walnuts, optional Recipe
Preheat oven to 350. Lightly grease a 9x5x3" loaf pan or coat non stick cooking spray.
Mix the flour, salt, baking powder, baking soda, cinnamon, ginger, and cloves together in a bowl and set aside.
Beat the sugar, butter light, and applesauce together until creamy and light, about 5 minutes.
Add the eggs, one at a time and continue to beat well.
Add the pumpkin and mix until smooth.
Stir the flour mixture into the pumpkin mixture and mix until well blended.
Add the raisins, orange rind, orange juice and nuts. Stir well and pour into the pan.
Bake for 60 - 65 minutes or until a tester comes out clean.
Cut into 12 slices/servings.
