    Onion Shortcake

    List of Ingredients

    1 16oz. can cream style corn
    1/3 c. milk
    1 beaten egg
    1 8 1/2oz. ready corn muffin mix pkg.
    4 - 6 drops red pepper sauce
    2 large thinly sliced onions
    1/4 c. butter
    1/2 tsp. dill
    1/4 tsp. salt
    1 8oz. pkg. sour cream
    2 c. grated cheese

    Recipe

    Preheat oven to 425. Grease a 9x13x2" baking pan.
    Combine the corn, milk, egg, muffin mix and red pepper sauce together.
    Pour into the baking pan.
    Saute the onions in the butter. Set aside.
    Use a medium bowl to combine the dill, salt, sour cream and half of the cheese.
    Add to the onions and stir.
    Pour over the cornbread mixture in the baking pan.
    Sprinkle the remaining cheese on the top and bake for 30 - 40 minutes.
    Makes 6 - 8 liberal servings.
